Back to Basics-Eggplant Salsa

What you will need:
2 eggplants, diced
4 medium size tomatoes, diced
1 medium size red onion, diced
¼ tbsp garlic, diced
1 jalapeno pepper, diced
3 stalks of green onions, chopped
Salt and pepper to taste
Recipe:
1.) Pre-heat the oven to 400 degrees Fahrenheit.
2.) Cut eggplants in half, vertically, and place on a cookie sheet to broil for 20–25 minutes or until gold and brown.
3.) Let eggplants cool down and peel the purple outer layer of the eggplants. Dice into chunks and place them in a medium size bowl.
4.) Add diced tomatoes, red onion, garlic jalapeno pepper and green onions with the eggplants and mix the ingredients well. Add salt and pepper to taste.
5.) Refrigerate before serving.
